I have received a message from Carlos Hecker, telling me how
his grandmother made Tocz, and since I think it is an improvement
on my recipe, I am passing it on.
If you squeeze the liquid out of the potatoes after grating them, you can
add less flour and the tocz will be crisper. I will have to try to make it
this way to decide exactly how much flour to add.
Carlos also recommends adding finely chopped onion to the batter.
I do not like it with onion, but some of you may want to try it this way.
