The water where the apples become Most- is apple cider. (mildly alcoholic).
If it was called Kwass at that time - I dont know.
Today Kwass is a popular drink in Ukraina and some parts of Russia.
It is made by putting stale bread ( among others ) into water and left
for fermentation. The result is a murky brownish liquid ( mild alcohol
     content)
sold in bottles and at street corners from 1000 litre trailers (see
picture). They say it is very healthy.
The vendors are usually women wearing blue aprons who sit all day long
       selling Kwass.
There are kiosks called : " Baked apple and Kwass". I tried it .
        ( I try almost everything).
This was the last time I drank Kwass.
You must start at an very early age otherwise you will never get
               used and enjoy it.
          Hardy
