I just noticed, on re-reading, an omission to a recipe I contributed
to the Bucovina Cookbook 1 some years ago.
Pg 6 Eggplant Entre from Ethel Tillinger. After sentence 2 "Turn
until soft and mushy." the next sentence should read.
Peel off the burnt skin then put them in cold water.....
I left out the instruction to peel off the skin. Is it possible to
include this at this late stage?
I remember this dish as one of my favourites and my Australian school
friends grew to love it too.
Warm regards to the list members, I learn so much of my history from
your stories. My parents survived the camp in Mogilev,
Transnistria. Luckily I was born post-war in Australia and even now
admire my parents for their courage in migrating, having
a child and starting a new life so far away from family in Australia.
Ethel
