http://en.wikipedia.org/wiki/Khazars has some information and cites
some source materials related to Khazar conversions to Judaism . . .

Hi Hedwig, the statement that the whole Khazar tribe converted to
Judaism is not proved.Until recently it was common knowledge among
researchers that it was only the nobility which converted and maybe
small parts of others. The majority was thought to have converted to
Islam. The extent of this is now disputed because too many synagogues
have been discovered on former Khazaria to be the appropriate number
for only the nobility. These archeological discoveries could be
performed only during the last 2 decades, as before the authorities of
the USSR have been very reluctant in Khazar archeology,as the Khazars
were enemies of the old Russians till prince Oleg defeated them.It is
still not known if all, the majority or a minority converted to
Judaism. The statement that they were like Wikings blonde with blue eyes
is in my opinion at least with a big question. As Turkic people the
Khazars originated in Central Asia and were a tribe which invaded south
east Europe some time after the Huns and long before the Mongols, with
other Turkic tribes in between. These kind of people are certainly not
known to be blond. Maybe they mixed with the Goths and became "more"
blond?

Regards,Alex
