Salat de boeuf was a favorite dish in Czernowitz.
In reality it contained little " Boeuf" (beef).
What it contained were the cooked vegetables, carrots, parsnip and
others,
which had been put into the chicken soup to impart it flavor,
pickled cucumbers cut into small pieces and some leftover bits of
cooked or roasted beef.
Add Mayonnaise and you have Salad de Boeuf Czernowitz style.
Sort of like Shalom Aleichem's Omelet without eggs.
