There is a good reason for this. Aramaic was the "Yiddish" or "Ladinoi" of the time - the spoken language by Amkha ( the common people), and therefore prayers or vows of major importance in life (or death) were composed in the spoken language, so that everybody would understand, and not in Hebrew, which was the language of the literate elite of the times (Babylon diaspora, Persian diaspora, etc)
