Dear Hedwig,
in fact the word "Schmetten" was widely used in many regions of
Austria, here are few examples from the 19th century Austrian
cookbooks:
"gibt dazwischen Krebsschweifeln, Zucker und einige Löffel voll sauern
Schmetten" (1849)
"in einer Pfanne Schmalz heiß werden, in der andern Schmetten mit
Vanilie und Zucker" (1827)
"kommt eine halbe Maß Schmetten" (1837)
