Thank you Karin et all! This sounds delicious. Attached is our Omi's Cake.
It's a bit different. I forgot that there is matzoh meal added. This
excerpt was used for a cookbook put together for an event organized by
Temple Sinai Women of Reform Judaism in Washington DC.
Some of my friends have made the cake and improved on the directions. My
mother dictated to me and because I had made it with her my whole life I
didn't realize that some of the directions weren't perfect.

Omies Chocolate Passover Cake

Passover prep brings so many wonderful memories of my family to mind. My mother made everything except the kneidlelach (matzoballs) which was always my grandmothers job. The menu was always the same, hard boiled eggs, homemade Gefilte fish (learned from my paternal grandmother in Poland before they emigrated to Israel) with freshly made horseradish, carrot souffl, veal roast, jello mold, and my mothers Chocolate Cake. And she did this twice for both seders augmenting the menu for each night.
It wasnt until she became too elderly to do the cooking that my sister and I realized how incredible it was that she made it all. Now it takes 4 or 5 people to do what she did.
My father chanted the Pesach story completely in Hebrew in a trope that will never be duplicated. I am proud to say that I have NEVER missed a Pesach with my family. My kids were fortunate to have their grandparents into adulthood and there was never any question that we should all gather on Pesach. Now, my nephew and son have been passed the baton to run the seder and new traditions have started.
But we always end the meal with my mothers Chocolate cake!
8 eggs separated
1 c sugar
5 squares unsweetened chocolate
Glass milk
OJ
2 T red sweet wine
1 whole lemon rind grated
8 ox walnuts (finely ground)
2 T matzo meal
cup sugar
6 tablespoons butter
1. Beat yolks with 1 cups sugar till foamy
2. Melt chocolate with half glass of milk and stir still smooth & thick
3. Add chocolate to yolks and beat
4. Add OJ, Wine & lemon rind and beat
5. Fold in walnuts and matzo meal
6. Beat whites with cup in a separate bowl till very stiff (hard peaks)
7. Folk whites into chocolate mixture and spread into an 8 inch spring-form pan
8. Bake for 10 minutes at 375 then for 40 min at 350
9. Side will pull away from pan when done but do not over bake!
10. Serve with whipped cream
