MAMALIGA
1 1/2 cups milk
Pinch of salt
1/2 cup corn flour
1 tbsp butter
1/3 cup sour cream
This amount will serve 4.
We Czernowitzers, were determinedly not Romanians,
but we did eat mamaliga, both because it was cheap,
but also because it was good.
The secret of good mamaliga is fresh corn flour.
Corn flour becomes bitter when stored too long.
Pour milk into saucepan, add salt and gently heat to simmering point.
As soon as milk starts to simmer, slowly pour flour into it, stirring
continuously. If you do not stir well, the mamaliga will be full of lumps.
Continue heating and stirring until the mamaliga starts to bubble.
Add the butter and stir. Remove from heat, stir in sour cream and serve.
