Malai is a corn meal cake and there are many different recipes as to how to
make it. It can be the equivalent of a poor peasant's cake, or it can be a
rich bread or cake. It can be made with yeast, or with baking powder. In my
opinion, the yeast being much preferable and authentic. (Does anyone know
when baking powder was invented?) The rich Malai also contains butter, eggs,
sugar (a lot or a little) and some white wheat flour. It may contain sour
cream (Schmetten or Shmetana), or it may be served with sour cream or
"Kaletuch" (a variety of Yoghurt). It should have a nice medium brown crust
and a moist crumbly interior. It is a "Mechayenish" to eat. Romania could
solve its budget deficit by exporting it on a large scale.
I did not find it on any restaurant menu in Chernivtsi.
BUT, in one of the restaurants on the Herrengasse, they had "Mayine" on the
menu. Unfortunately, they only serve it in the winter. Anyone willing to go
to Chernivtsi to ski, have a snow fight or toboggan down the Veteranengasse
( a steep street connecting the Brauhasgasse with the Neuweldtgasse), then
eat Ukrainian Borsht and Mayine?
To those who have not experienced a Czernowitz winter, it gets quite cold.
In the winter of 1940 - 41, the temperature went down to -40 Celsius, which
happens to also be -40 Fahrenheit. That was unusually cold, the Russians had
brought the cold with them from Siberia, but despite global warming, even
this winter, the temperature is likely to go down to -30C = -22F.
