Hi Ruth,
you are right: "Kapusta mit Kvas" is just an expression.
The Russian "квашеная капуста" ( kvashenaya kapusta ) means just "Sauerkaut".
The beverage Kvas, was not used with Kapusta, and is not sour at all.
