Sorry about wrong original address and format. I had forgotten
what I am supposed to do to cntact the list.
Just letting you all know that I have just tested a couple of
the recipes and here are the results.
My mother's,- as I remember its taste and texture,- is my
favourite.
1.Grate 4 large potatoes and allow to stand for 15-20 minutes.
Squeeze most of the liquid out of the mixture.
2.Soak a few slices of bread (or 1/2 cup breadcrumbs), squeeze
out the liquid and add to the potatoes.
3.Add 3- 4 eggs, 2 spoons of self-raising flour, salt and
pepper.
(Add a chopped onion if you prefer.)
4.Bake for 30 minutes at 200deg.C.

As for the Malai,-
I tried the receipe more or less as as given by Cornel,- and it
didn't quite taste as I remember it, although the texture was about OK.
Which cheeses are we supposed to use,- yellow grated, white
cottage or branza (fetta)? I mixed a bit of each,- it seemed to have too
much sugar, marg.,etc. So I cut it all down.I don't remember it as a
'cake',- it was more a kugl/pudding style wich we ate with sour cream or
yoghurt. Not too sweet!(I buy a 'flourless' orange or lemon cake which
is made with corn meal or polenta,- but a malai is different.)
