Dear Miriam,
First I would like to apologize for not having written to you sooner to tell
you, how good your recipe for Fluden was. I made it before Yom Kippur, took
it with me to Chicago and we ate it both on erev Yom Kippur as well as on
mozaey ha-hag. We all loved it, particularly my grandchildren.
I recommend it to all Czernowitzers.
You are right that many Czernowitz and Bukowina recipes were learned by our
mothers from Austrian cookbooks. I still have my mother's "Was koche ich
Heute" by Julius Eckel and Hans Ziegenbein published sometime after 1933.
It is in Gothic script, torn and worn, it went from Czernowitz to Radautz,
then to Oradea Mare, then to Cyprus, to Israel, to New York, to California
and eventually to Bloomington Indiana. My mother used it mainly for the
recipes of deserts, cookies and cakes and I do the same.
Jewish Czernowitz cooking was based on a mixture of traditional Jewish
recipes, Austrian recipes learned from cookbooks, Romanian, Ukrainian,
Polish and Hungarian recipes, sometime depending where the family had come
from to Czernowitz. In my case, because one great-grandmother came from
Hungarian Marmoros, one from Galizia and one from Romania, we ate certain
Hungarian dishes, like Kummel Suppe (Caraway soup), vegetables were often
cooked Polish style, boiled and tossed with breadcrumbs fried in butter and
we ate Romanian Mamaliga, Malai Mititei and Ciorba.
I would say, that irrespective from where the various recipes originated,
If they were routinely used by our mothers grandmothers and aunts, they are
part of our Czernowitz and Bukowina heritage.
Furthermore; each family had its own way of preparing a given dish and the
same dish, might have been known by different names.
If any of you want the Viennese recipe for "Krautfleckerln", I'll copy it
from the cookbook and send it to you.
