Dear Friends,

Please, do not be to too angry with me, but almost all the Czernowitzers
recipes mentioned ( except the "Geffilte fish), appear in the wellknown
"Wiener Kueche, Sammlung von Kochrezepten aus der Staat. Bildungsanstalt
fuer Koch- und Haushaltungsschul Lehrerinnen und Kochschule der Gastwirte in
Wien", Von Olga und Adolf Hess"......
I have the 38th ed,, 1980. My parents got the book as a present from the
Austrian embassy, after reporting that their original book got damaged.
I bet that this cookbook had been used also by the Habsburg Haushalt.
Even Mimi's wonderfull Mamaliga ( I cooked it - and according to Elan, my
Bucharest-born husband - it tasted very good!) is known very well in Italy
and Austria, as "Polenta".

Anyway - here is another recipe - you tell me if it is from Wien or
Czernowitz....

          KRAUTFLECKERL, or Noodlesquares with Cabbage

80 gr. fat, ( beeing an Israeli - I use olive oil)
50 gr. onions
1Tbs sugar
400 gr. cabbage
1Tbs vinegar
1/2 tsp caraway seeds
1tsp salt
1tsp freshly ground pepper
1/8 l. water
________

300 gr. noodles - sqares)
salted water
1 Tbs oil

Fry finely chopped onions and sugar in fat until brown. Add thinly shredded
white cabbage, spices, water and cook until done. Mix with the cooked
drained noodles.
