Ashkenazi and Sephardic Hebrew are written the same way; the difference is
in the pronunciation. Yiddish is a different language entirely.

Transliteration is always dicey.

That indicates uncertainty about the transliterations into the roman
alphabet, not variations in the Hebrew writing. The only variable in
Hebrew writing would be Ktav Malei (using consonants to indicate certain
vowels) versus Ktav Chaser (not adding consonants).
